Harvest, winemaking, aging and refinement: Harvest is done manually in the last week of September. During sunny and windy days, the harvested grapes are exposed to the sun on racks and during the night they are covered to avoid humidity. Then grapes are pressed (whole bunch) and, after a short skin maceration, must ferments in stainless steel barrels at controlled temperature. The wine is then left in contact with its lees for several months before proceeding to a pre-bottling clarification. Right before bottling we add a portion of Vermentino di Gallura to add freshness.
