SU MERE Cannonau di Sardegna doc, Riserva. Wonderfully concentrated deep fruits can be felt layered in this wine with nuances of elegant oak and salty notes, up to a soft palate, with supple tannins and a fine and persistent finish. Surprisingly full and fresh at the same time.

Color: Su Mère 2015 2015 shows a beautiful dark ruby color, intense and at the same time luminous, with a warm brown shade on the edges.

Bouquet: On the nose it is complex and structured. The wine presents multiple layers of dark berries, reminiscent of late-ripening morello cherries, notes of forest earth, wet tobacco and licorice. Black pepper and cloves add complexity to a powerful and seductive nose. Wonderfully concentrated deep fruits are layered with nuances of elegant oak and savory notes, a totally enveloping palate, with soft tannins and a fine and persistent finish.
Taste: Full and fresh at the same time with long persistence in the mouth. The alcohol warms it up bringing the experience to a superlative level

Harvest, winemaking, aging and refinement: The overripe grapes were harvested by hand and carefully selected, bunch by bunch. After a soft pressing and subsequent destemming, they remained in maceration, in steel containers. Maceration time, for this harvest, was 20 days during which frequent pumping over and délestage were practiced. After racking, the free-run must rested in steel tanks for about 2 months. During this time, an inoculation of lactic bacteria was done, then the wine was moved, with its fine lees, into first passage barriques, of medium toasted Allier oak. Unmaredivino was the first winery in Gallura to test the Garbellotto N.I.R. project. We used sweet barriques, spicy wood from the Equilibrium structure together with some traditional concept barriques. The goal was to obtain the most natural possible taste result. Here, the Su Mère 2015 rested for 24 months during which we practiced repeated batonnage. No malolactic fermentation was carried out. The softness and sweetness of the glycerin and alcohol are compensated by the high acidity of this red wine. While drying the vineyard these bunches, have concentrated not only sugars but also acids and all the aromatic substances.
The wine was then moved to stainless steel tanks where it remained for about 2 months before being bottled. Su Mère 2015 then rested for a further 60 months in bottle. Experience teaches us that this wine requires at least 24 months of bottle to balance the sweet note, that is initially too evident, and that gradually takes on complexity.
