Harvest, winemaking, aging and refinement: Harvest is done manually from early September to the first half of October depending on the season. After being pressed, the grapes ferment in stainless steel tanks at controlled temperatures. After about 16 days, the wine is drawn off with a soft pressing and left in contact with its lees for 18 months in fine-grained, medium-toasted, first-passage Allier oak barrels. Repeated batonage are done in barriques to favour malolactic fermentation. The wine then rests in bottle, at controlled temperature, for at least six months before being ready for the market.
