NEROSMERALDO Cannonau di Sardegna doc is a powerful red with great personality. The opulence of aging in wood is balanced with the structure and natural freshness of the grapes, with the variety typical balsamic notes that overlap adding a pleasant spicy note.

Color: Intense, brilliant ruby red that turns to garnet with aging.

Bouquet: Intense, fine and complex. It shows spicy notes, red fruit, floral scents, all in an excellent fragrance. Olfactory notes of aromatic herbs, balsamic and typical of the Mediterranean scrub.
Taste: Warm, harmonious, enveloping, dry, rightly tannic, savoury. Good persistence with interesting development of aromatic notes.
Serving temperature: 18° – 20° C
Pairing suggestions: Ideal with roasted meats, game, cheeses with an intense and spicy flavor. Excellent with red meats and cured meats. Thanks to its medium-high alcohol content, it is a wine that pairs well with full-bodied and structured dishes, holds well intense seasonings. Excellent with braised meats and game but also with first courses with an intense flavor.

Harvest, winemaking, aging and refinement: The Sorso-Sennori vineyard has the shape of a saddle. The grapes for Nerosmeraldo are harvested in the lateral parts of the vineyard. The harvest, strictly manual, takes place with an accurate selection in the vineyard, bunch by bunch.
After a soft pressing and subsequent destemming, grapes remain in maceration in steel containers. The maceration time, for this harvest, was 20 days during which frequent pumping over and delestage were carried out. Immediately afterwards, around the first half of November, the wine was transferred to third or fourth passage Allier oak barriques where it rested for about 9 months during such time we did repeated batonnage.
Subsequently the wine was prepared for bottling and rested in the bottle for 12 months before being put on the market.
