Grapes 100% Vermentino di Gallura (Vineyard planted in 2008).
Yeld and climate 2.50 ac./4500 bottles. Typical Mediterranean, hot and dry summers, mild and rainy winters.
Harvest, vinification, maturation and refining Manually performed in early September. Grapes goes from vineyards directly into a refrigerated room at a temperature of 32° F where it is kept for 24/48 hours. After destemming grapes is kept at 32° F for 48/72 hours then it is soft pressed. This long cycle of vinification (takes about at week as compared to a regular 2 hours cycle of vinification!) is meant to preserve all fragrance and aromas of the original fruit. Must then ferments in stainless still tanks at controlled temperature. Wine is then left on its lees for several months before being bottled.
Color Straw yellow with bright greenish hints.
Bouquet Elegant, intense and persistent. Reminds the grape, Mediterranean vegetation, apple, white peach, yellow flowers like Spanish Broom and wild flowers.
Serving temperature 46-50°F.
Food pairing It is a great aperitif wine. Pairs perfetly with simple and tasty tomato&basil spaghetti as well as with clams spaghetti. It’s super with Sushi, seafood, any light fish dish, vegetables pies, fresh goat and cow milk cheeses.
