Harvest, winemaking, aging and refinement: Harvest is done manually at the beginning of September, usually the first week. Harvested grapes (the whole bunches) are left to rest in a cold room (temperature around 0 °C) for 24-48 hours. After destemming, the must remains at 0° C for further 48-72 hours (skin maceration) followed by soft pressing. This long cycle, which takes about a week compared to the two hours of a traditional winemaking, is meant to preserve the fragrance and the aromas of the original fruit. Must ferments in stainless steel tanks at controlled temperature. The wine is left in contact with its fine lees for several months before being bottled.
